Brinley's Rhode Island Apple Pie

Originally developed back in 1991 by Peter Carlisle, then innkeeper of The Brinley Victorian Guest House in Newport.
To make 9” double crust:
Sift together: 1 ½ cups flour 1 teaspoon sugar 1 teaspoon salt
Cut 2/3 cup shortening into flour mixture until beaded.
Mix: 4 tablespoons water 1 teaspoon vinegar ½ a beaten egg Blend liquid lightly into flour mixture.
To make “Eye of the Storm” filling:
Soak 1/3 cup golden raisins for one hour in “Eye of the Storm” blush wine, enough to cover.
Peel, core and slice thin five cups tart baking apples (such as Baldwin or little green appies from Rhode Island).
Add to apples: ½ teaspoon cinnamon ¼ teaspoon cloves ¼ teaspoon nutmeg ½ cup light brown sugar 2 tablespoons honey raisin mixture 1 tablespoon cornstarch
Combine all ingredients. Pour into pastry shell. Dot with one tablespoon butter. Bake for 30 minutes at 350. Turn oven to 300 for 20 minutes.
